Seafood from Gran Canaria

Fishermen work traditionally on Gran Canaria, working the waters around the island. They use traps for fish and/or hooks on poles or longlines. The catch is processed, sealed and transported on ice and approved for sale on shore within eight hours of being caught.

Two of the fish most prized by island chefs are the tuna and the parrot fish. The tuna’s (Katsuwonus pelamis) meat is firm and dark red with fat levels above 7% ( low in saturated fats with a high concentration of omega-3 acids). It’s rich in essential proteins (more than 25%, vitamins and minerals. The parrot fish (Sparisoma cretense) is a white fish with a delicate texture and a flavor reminiscent of seafood. It’s high in protein and is traditional prepared in stews or fried.
