Red Cardoon

Although the cardoon or thistle is one of the best known winter vegetables, the red cardoon is not so famous. Appreciated for its high nutritional value, the cardoon is usually eaten cooked but this variety is cultivated in a different way, which enables it to be consumed raw. When the cardoon plant reaches a certain height, one or two months before consumption, it is completely buried in the earth, enabling the soil to give it a wide range of nutrients and a characteristic flavour.
