Artichoke of Tudela or “Blanca de Tudela”
No king can live without a queen and the undoubted queen of this region is the artichoke. Highly appreciated in the world of gastronomy for its excellent quality, it is one of the most complete vegetables.
The Arabs cultivated it and local farmers, after many years of careful selection, finally created the variety called “Blanca de Tudela”, which has a more rounded shape and a circular hole at the top. It has a Protected Geographical Indication certificate.
You can find it fresh at markets in Spring and Autumn and in canned form throughout the year.
