Saborea España and the State Secretariat for Tourism present the 3rd Slow Taste Enogastronomic Destinations Conference in Madrid

The Casa de Canarias in Madrid (Santa Cruz de Marcenado, 13) hosted the official presentation of the 3rd Slow Taste Enogastronomic Destinations Conference this afternoon. The event, organized by Saborea España and the State Secretariat for Tourism, will take place on the island of La Palma on September 25 and 26, 2025. It brought together institutional representatives, specialized media, and professionals from the tourism and gastronomy sectors, reinforcing the commitment to a more sustainable tourism model  one rooted in local territory and centered around people.

Miriam Perestelo Rodríguez, Councillor for Economic Promotion and councillor of the Society for the Promotion and Economic and Social Development of La Palma (SODEPAL), opened the event by highlighting the growing importance of gastronomy a sector that has been especially enhanced in recent years by Saborea La Palma within the tourism experience that the island offers.

Next, Susi Díaz, President of Saborea España, emphasized “the need to rethink the relationship between the traveler and the destination,” advocating for a more relaxed and emotionally engaged approach. Raquel Rebollo, Councillor for Tourism and Vice President of the Cabildo of La Palma, highlighted “the island’s gastronomic, cultural, and natural richness” and its ability to host unique experiences tied to landscape, local products, and authenticity.

Also speaking were Blanca Jiménez, President of the Association of Gastronomic Destinations and Vice President of Saborea España, and Emilio Gallego, Secretary General of Hostelería de España. Both agreed on the need to promote the Slow Taste concept as the new luxury of enogastronomic tourism.

The final address was delivered by Ana Muñoz Llabrés, Director General of Tourism Policies at the State Secretariat for Tourism, who reaffirmed her Ministry’s support for this initiative. She emphasized that this project prioritizes assets such as gastronomy and the cultural landscape of tourist destinations over more traditional attractions in the case of the host island, sun and beach. On behalf of the Secretariat, she underlined the importance of this event as a meeting space for all stakeholders benefiting from tourism plans (with funding of €64.7 million) and the Experiencias Program (€7.9 million), both supported by Next Generation EU funds, to share best practices.

She praised the strengths of the Slow Taste concept in diversifying tourism and gastronomy offerings while attracting new visitor profiles  both domestic and international  in a way that respects local communities and highlights our gastronomy, culture, and landscapes. She also celebrated the excellent relationship between the Secretariat and Saborea España, which has enabled the implementation of this major project to promote gastronomic experiences in close collaboration with the primary sector — making the 3rd Enogastronomic Destinations Conference in La Palma possible.

The presentation concluded with a tasting of traditional La Palma products, accompanied by wines with Denomination of Origin, offering attendees a sensorial experience that conveyed the island’s characteristic flavors and aromas.

Following successful previous editions in Valladolid (2023) and Cullera (2024), the Enogastronomic Destinations Conference returns for its third edition, aiming to become a lasting forum for dialogue, learning, and connection among destinations, businesses, and institutions.

Organized under the umbrella of the National Gastronomic Tourism Plan, the conference seeks to amplify the positive impact of enogastronomy on local development, employment, and regional identity.

This event reflects the State Secretariat for Tourism’s firm commitment to the Saborea España brand and the promotion of the Slow Taste concept a more human and sustainable perspective on how we travel, eat, and engage with the places we visit.
