The secret to a good roast piglet is in the quality of the raw material. It is fundamental that piglets are less than three weeks old or younger still. They must have been fed solely on their mother’s milk and must weigh less than 6.5 kilos. The roasting technique is important too in order to get excellent results. A good oven would have to include a vault made of bricks and clay and have a swivel base also made of clay tiles that allow for the heat to be intense and to spread evenly. It should be fueled using logs coming from Holm oak, oak or ash tree. In the end, the piglet should ideally be extremely tender but still have a hard, crunchy and golden crust. It is also mandatory in the Segovian tradition that the piglet should be carved using the edge of a plate, which is smashed onto the floor immediately afterwards. This way of carving is proof that the meat is tender and perfectly roasted at the same time.

“Everything is used from the pig, even its gait”. With this saying we are conveying the message that everything from a pig will be used completely.
In Segovia the famous “chorizos” from Cantimpalos stand out. They are elaborated with minced meat and pork fat seasoned with of salt, garlic, paprika and oregano. This mixture is then left to cure for three weeks.
But it would be unfair to mention chorizos only. There is a great variety of different products that have to be mentioned here: black pudding and the broth that it creates, the botagueña sausages, the bones kept in brine ready to be used in stews, pork loins, hams, muzzle, ears, pig’s trotters, face, cheeks, ribs, fried pork rinds, salt-cured pork belly, crackling and lard balls for cooking, making pastries or making soap.

Over the centuries, it featured five synagogues, two “Talmud Torah” or religious schools, a hospital, two butchers, a bread oven, baths, and the Jewish cemetery.
