The lamb route

If there is a dish one hundred percent associated with Segovia cuisine, that dish is roast lamb. On any festive day, and as a special celebration, roast lamb is always eaten. On these occasions lamb, the Spanish oboe and the tamboril (a small drum) go hand in hand.

The lambs eaten in Segovia are suckling, baby lambs, between 15 to 21 days of age which have been fed solely on their mothers’ milk. They are presented roast and cut into four quarters on ceramic plates with no additives other than salt and water. Those with the best reputation for flavor are those coming from high moorlands where aromatic plants grow on most pastures. It is a known belief that the flavor and the aroma of these pastures reaches the milk of both sheep and goats. Hence the fine flavor of Segovian roast lamb.

 

The itinerary we propose will allow visitors to enjoy the best restaurants and butcher houses specialized in lamb. Moreover, it will enable to discover the fascinating history of the transhumance, which was decisive for the flourishing of the textile industry in our city and for the development of a delicious cuisine.

Cañada Real Soriana Occidental

  • Description: The Western Soria Royal Cattle track runs over 700 km diagonally in the centre of the Iberian Peninsula. It starts in the province of Soria and ends in the province of Badajoz. The Royal Cattle tracks were used for cattle transhumance and they have been regulated since Alfonso X´ times in 1273. This decree was aimed at regulating and protecting specific tracks that due to its important value deserved to be preserved. To be consider as a such, cattle tracks had to comply a number of requirements: they had to be 72,22 m wide, and they had to cover a long distance (more than 500 kilometres) and go from North to South taking into consideration the geographical barriers of the itinerary. This network of cattle tracks goes along with smaller tracks such as: the “cordeles” (up to 37,50 meters wide), “veredas” (up to 20 meters wide) and “coladas” (less than 20 meters wide).

Esquileo del Marqué de Iturbieta

  • Description: Their silent ruins take us to a period in which the wool trade was the economic driver of this area. This impressive pre-industrial building is known as “el Esquileo de Santillana” due to a former inn which was located nearby. It was built in 1745 by Ignacio de Arizcun, Marquis of Iturbeta in order to shear in it his heard, composed by approximately 40.000 transhumance sheep. It was the biggest “esquileo” (shearing farm) located in the cattle track and it set a model which was followed by other shearing farms.
