In the last 15 years, Seville’s gastronomic offer has expanded considerably, giving way to a generation of young entrepreneurs and new chefs who have created a new Sevillian cuisine.

Along with the modernisation of techniques and the influence of other culinary cultures, most of them have as their starting point the love for Andalusian products and respect for our classic cuisine.

In exquisitely decorated establishments with a charming atmosphere, you can enjoy gastronomic menus, menus that offer independent cuisine at a medium price and other proposals, of the same quality, but in more casual formats.

On this route we propose that you discover the proposals of some of the chefs who are giving their mark on our cuisine. All of them are establishments recognised with a Michelin star or as Big Gourmand in the prestigious gastronomic guide.

In addition, we have asked them to give us their personal recommendations about other gastronomic proposals in the city, to offer us their recommendations to enjoy your visit to Seville in the best possible way.

  • Description: The only Michelin-starred restaurant in the city. At Abantal, they have been committed from the outset to contemporary Andalusian cuisine, based on the traditional flavours of the south and always respecting quality products.   • Description: If you want to savour the best of the coasts of Cádiz you must visit this temple of fish and seafood. Of very small dimensions, its Japanese bar stands out for those who want to enjoy the work of its staff. The treatment of the excellent raw material is the key to its good gastronomic offer and its success. Let yourself be carried away by the recommendations, and try, for example, the same piece with different preparations: raw, grilled or by means of an excellent frying.
  • Resident’s tip: Before you sit down, stop and take a look at the magnificent fishmonger’s table, it’s a real spectacle. Book well in advance, it is in great demand. If you can’t find a space, you can try their annexed tapas establishment, La Barra de Cañabota.

  • Description: Classic restaurant offering creative Mediterranean cuisine. It offers three tasting menus. It owes its name to an Arabic word meaning “olive juice” (oil). Classic décor and very attentive service. Don’t pass up their cheese and liqueur trolley (try some PX or brandy).

  • Description: El Rinconcillo is the oldest establishment in the city of Seville. It was founded in 1670, and since then it has been offering wines and food to its customers in the same place. Since 1833 it has belonged to the Rueda family, and is currently run by the seventh generation. Julio Fernández de Abantal recommends it for its faithful reproduction of the classic Sevillian and Andalusian recipes, for its magnificent cellar of Jerez wines and for the professionalism of its staff. As a curious tip for the visitor I recommend standing at the bar in front of the ham cutter, a real artist!!!

  • Description: Olives: The olive tree, olive oil and olives are linked to the history and culture of Seville and its province, and form part of the material and symbolic heritage handed down from generation to generation since ancient times. Nowadays, there is a very important production of extra virgin olive oil, a raw material admired all over the world.

    Equally important are the olives, and the classic Sevillian table always welcomes the visitor with this delicacy in its many forms: split, crushed or striped, whole, stuffed with anchovies or peppers, etc. They can be gordales, manzanillas, verdiales or other varieties and can be green, black or purple, etc. In the heart of the Cerro del Águila neighbourhood is one of the oldest food markets in Seville.

    The helpful and honest treatment of its sellers has ensured that the traditional market, what our grandparents used to call “La Plaza”, has not been lost. With popular roots from its beginnings, the market was built in 1937, the same year that one of the most important manufacturing industries in Seville, the well-known “Hilaturas y Tejidos Andaluces” (HYTASA), was inaugurated in the neighbourhood. The chef at Sobretablas recommends the olive stall in this market to sample the immense variety of types and dressings available.

  • Description: Restaurant with modern haute cuisine and market cuisine where the quality of its products is paramount. Specialising in fish and seafood. Winners of various gastronomic awards, they hold a Sol Repsol.
  • Resident’s tip: Its chef, Pedro Giménez has a special predilection for suckling veal shanks, game meats and fish and seafood from the nearby coasts, try them during your visit. The establishment is a bit far from the tourist centre, but very close to the shopping area of the Nervión neighbourhood, which is a recommended visit.

  • Descrition: On the ground floor of the market are the remains of the Castle of San Jorge, the seat of the old Inquisition tribunal. This castle was the seat of the Inquisition from 1481, although its initial construction dates back to the Arab period, to 1171. Affected by the continuous abandonment and successive floods of the Guadalquivir, in 1823 the market, popularly known as the Plaza de Abastos, was installed on its site. Today it houses a selection of traditional stalls, several stalls that work as a bar, a cooking school, an Andalusian cooking workshop and even a theatre! The owners of Ovejas Negras tell us: “The location is beautiful. There is a lot of local produce, especially cured meats, and we also like the fact that you can eat anything from toast with ham to fabulous sushi. We also recommend the organic market in Alameda, visit it if you happen to be in town, the fruit and vegetables at Tatiana’s are incredible. Also, for those who have more time, we recommend a visit to the Central Market of Seville, Mercasevilla. For little more than one euro you can visit some of the warehouses and see the activity of vendors and and shoppers working at a frenetic pace.
  • Resident’s tip: Go early, have breakfast at the Bocasú stall, run by one of Seville’s best pastry chefs, Manu Jara, and experience the neighbourhood atmosphere.
