The Royal Site of San Ildefonso, Biosphere Reserve, is a dynamic municipality full of attractions located at the heart of the Guadarrama National Park, a few kilometers from Segovia. In addition to its rich historical and natural heritage, it offers also a wide gastronomic and cultural offer around the “Judión” (large white bean), La Granja’s star dish.
Since 2003, La Granja’s Judión, has been the Royal Site’s landmark, by which date this product was granted with the guarantee mark “Judión de la Granja”, a quality certification that protects this horticultural and historical product from fraud and imitations and promotes it at an international level.
The “Tutor del Judión de la Granja” association is an organization in charge of the bean certification and the control of its traceability as well as the product commercialization. The Royal Site of San Ildefonso City Council is the owner of the guarantee mark “Judión de la Granja”. Its main aim is to promote the value, conservation, recuperation, and revitalization of this horticultural and historical Segovian product as a determining element for the creation of local and provincial sustainable development.
La Granja’s Judión is a horticultural product of outstanding quality, being one of the most relevant dishes in the province of Segovia’s gastronomic offer.
In July 2013,La Granja’s Judión Guarantee Mark Project was launched. This was a collaborative project designed to promote the cultural and gastronomical heritage in Castilla y León. Thanks to a grant awarded for the project’s implementation, a multidisciplinary team was formed in order to achieve the recognition of La Granja’s Judión Guarantee Mark and the protection of its production, distribution and commercialization.

Description: The Royal Site of La Granja de San Ildefonso is not only known by its cultural and natural heritage. Its gastronomy is also renowned due to its flagship product : La Granja’s Judión. The origins of The Royal Site of La Granja’s gastronomy date back to the construction of the Royal Palace of la Granja in the 18th century. French gardeners introduced the seed of a bean which was characterised by its big size. According to the local tradition, Queen Isabel of Farnese used these beans to feed her pheasants. Throughout the years, the Judión developed from its original purple colour until it acquired its characteristic whiteness.

Description: La Cocina de Ideas-QBET, is a cooking workshop located at the heart of la Sierra de Guadarrama, in Valsain. It combines tradition and innovation, the know-how and the creativity of cooks and chefs with the aim of creating the best recipes only using natural ingredients.
