THE GOFIO MILLS OF GRAN CANARIA

There were many gofio mills in Gran Canaria up until only a few decades ago. These mills, through blood, sweat, and fire, produced different types of gofio all over the island. Nowadays, there are several that continue to produce this wonderful product of the island’s gastronomy, but only a few of them are open to the public. A visit to these mills will take you back in time to a time when gofio was the basis of the island’s diet and on which the socio-economic model of the entire population was based. Getting to know the gastronomy of the territory you are travelling to is a fundamental part of understanding the culture you are immersing yourself in.

  • Description: It is said that this building was one of the first to be built in the new space that was opening up in the village when it began to expand with the Calle del Agua, an unmistakable symbol that progress was coming to La Vega. Known as the Molino de Fuego de San Mateo, it owes its name to the diesel engine that was installed for its operation and is one of the few that continues to produce delicious gofio to this day.

  • Descripción: The Firgas water mill is the oldest water mill in the Canary Islands that is still in use: its construction dates back to 1517 and it continues to grind gofio to this day. Due to its historical importance it was declared an “Asset of Cultural Interest” by the Government of the Canary Islands in 2007.

  • Description: In the Ethnographic Museum and Interpretation Centre of Valleseco we will find information about the municipality in general and about the culture of gofio in particular. The museum building was an old house known as the Casa del Estanco, which was completely restored for this project. It has three rooms, two of which are dedicated to gofio and a third where pieces of Canarian craftsmanship are exhibited. You can find out when cereals were introduced to the Canary Islands, which were used to make gofio, and a replica of a mill.
