Products as authentic and with so excellent quality as the ugly tomato, the artichokes, the lettuce hearts, the spectacular asparagus, … make our cuisine this good.   • Description: In Aire de Bardenas you can enjoy a totally bio menu made with proximity ingredients. Those ingredients are so close that you will see them in front of your table. Fresh seasonal products, well cared by our cooks. Our cooking is sincere and local, with traditional dishes. Migas, a typical Castilian dish that have been cooking in this land since centuries ago. Fresh asparagus carried by the farmers themselves to the kitchen. The artichokes that you will taste were planted in the piece of land in front of the hotel the night before. The peppers, the lettuce hearts, that are original from Tudela… If you feel like eating meat, try the lamb. Nearby Aire de Bardenas pass the flocks of sheep that eat in the surroundings of the hotel. All these are what you will taste. We have also a selection of desserts cooked by our baker chef. Simple, tasty, natural and most of all, healthy dishes. And the wineries and wines from the area predominate in the wine menu: Cintruénigo, Borja, San Martín de Unx, Carcastillo, Murchante… Come to enjoy with us.

  • Description: Specialist in local season vegetables. Traditional food. At the entrance of  Murchante, we are located inside the Príncipe de Viana Winery, which wines are highly appreciated. We have a wide, luminous and comfortable dinner. For José Aguado Hernández, chef of the restaurant, kitchen and raw materia go hand by hand. He elaborates with mastery the exquisite vegetables provided by the farmers directly from their farms. As we commonly say here: from the bush to the pot.
  • “Our cooking is 100% traditional, as we cook as our parents and grandparents did”, explains the first chef. “We speak about new innovative  flavours, which is OK, but we are losing the antique ones, the authentic ones that we have transmitted from generation to generation. In our restaurant we have always bet for this kind of cooking”.Príncipe de Viana is specialised in vegetables. “We count with a vegetables menu all year through and always from the season. We believe it has to be like this to keep the authentic flavours from the orchard products”.Winter’s menu is a pleasure for the palate. It starts with some salads using the local lettuce hearts, curly endive, chicory, celery and red cardoon from Corella. We continue with stewed small onions, chard leaf in green leaf tempura, fried artichokes, young garlics, borage, broccoli covered with Iberian pork dewlap and culminated with white cardoon. The price of the menu is exceptional: 28€ including taxes. All dishes full of freshness where the boost of the flavours is studied carefully to offer our guests a unique experience in each bite. 

    Who prefers to decide over the menu, it counts with plenty of dishes with vegetables, tasty meats and fish. All accompanied by the Príncipe de Viana Winery wines.

  • Description: We are tradition. We are evolution. We are vegetables. This restaurant was founded by the Salcedo family more than 50 years ago. It’s a living tribute to Navarre’s gastronomy and the local orchards, where vegetables (mostly cultivated in our own orchard) become the best ambassadors season after season. We offer a tasting menu with seasonal vegetables to invite guests to taste the authentic ambrosias from this land. The wide and complete menu surprises for the singular and contemporary touch of its dishes, such as the borage with potatoes and cockles, the Punk egg with potatoes and crystal peppers or the stewed onions at Tudela’s style cooked in their juice with Roncal cheese. Our cooking combines tradition and vanguard, which moreover has been recently recognised with a Sun from the Repsol Guide. The interior of the restaurant is distinguished by its classical and elegant style that preserves the characteristic ornamental Baroc style in the rooms. Here, the Spanish famous writer Bécquer enjoyed the late romanticism halo that veils this place. An emblematic spot in Tudela’s center, where the fusion between tradition and contemporary has become the identity signature of the house.

  • Description: Topero is located in the Plaza de Los Fueros (Los Fueros Square),  right in the middle of Tudela. This restaurant offers incredible views of the city with two round big tables to enjoy the food, the company and the views, the most important factors in our restaurant.
  • The queen of the restaurant is without doubt the vegetables. We treat them with the care they deserve to avoid them to lose all their properties or their textures, and highlighting their flavours. The products we serve are always from the season we are in, offering first quality products, which moreover are fresh and local.   • Description: Trinquete is an orchard with a small restaurant. Its leitmotiv is do not damage in the kitchen what we care so much in the land. They offer visits to collect vegetables that can be tasted later in the restaurant, as an example of good practice in circular economy.
