Description: A lover of traditional cuisine with a deep connection to the land, Víctor (1972) attended the Hospitality Schools of Madrid and Santiago de Compostela. Before launching the family business, he worked with Santi Santamaría at Racó de Can Fabes in Barcelona and Sant Celoni in Madrid. Another important stage of his training took place in Catalonia, at the Ábac, Rúcula and Fonda Sala restaurants. His establishment earned its first Michelin star in the guide’s 2018 edition. It also has two Repsol suns. It was a finalist for the 2009 Best New Restaurant Award at Madrid Fusión, the International Gastronomy Conference, and a finalist for the 2011 Chef Millesime Award.
