Tomato stuffed with galician prawn tartare

 

Preparation

Blanch some medium tomatoes, peel and empty.

Peel the prawns, chop them and add fermented soybeans, a point of mayonnaise, salt and ground pepper.

We prepare a gazpacho (cold vegetable soup) with the filling of the tomatoes, adding orange juice, oil, pepper, apple, salt, ground pepper, water and Chardomay vinegar.

Let stand 12 hours.

We crush and strain.
