Although Oviedo has a long tradition of eating pork and pork products, its finest meat is Austurian beef. It comes from two types of cow: valley austurian (roxa or carreñana) and mountain austurian, both raised on natural feed and bearing the IGP seal. It’s considered the best meat on the continent, and is healthy, low in fat, high in omega-3 acids, proteins and amino acids.

Austurian beef is a culinary jewel served as filets, chops or ribs but it also delights the palate in other dishes, depending on the cut: carpaccio, scalloped, skewered, rib-eye…or as a fundamental ingredient in many succulent roast dishes and stews.
