Also known as “Garlic Soup,” it’s one of our most restorative dishes, helping people edure the cold and stormy months of Winter. It’s quick to make, its ingredients easy to find. For centuries it was one of the most common dishes served in Castilian homes given its basic and replenishable ingredients its high-calorie count necessary for field work. The current recipe has evolved from the original, and it varies according to region. But all use pork lard, garlic and bread.
Instructions
Heat oil in a pan. Add garlic and cook till golden under medium heat. Add paprika, making sure it doesn’t burn. At the same time add 4 or 5 cups of water to a casserole pot and bring to boil. When boiling add the mix from the fying pan along with the salt and bread. Cook on low heat for some 15 minutes. If desired, add a raw egg and let cook a bit longer.
