“Rossos” or “Blond” Noodles


Pour the oil in a pot along with the cleaned and chopped vegetables and sauté with the crabs and the galera (a crustacean found in the Mediterranean). Then add the trash fish (fish that would otherwise be discarded as too small or bony) followed by the water. Let cook over low heat for an hour. Strain through a sieve and save the broth.

Preparing the noodles:

Heat a pan or casserole dish adding the oil, the garlic and the noodles, moving them until they’re the color you desire. Add the picada ??? and the broth until they’re submerged and let the broth reduce until the noodles are dry. This dish can be served with a good alioli sauce.


  • 300 gr n º 2 noodles
  • Virgin olive oil
  • 5 cloves of unpeeled garlic
  • 2 tbsp chopped garlic and parlsey
  • 2 ltr fish stock

- Broth:
  • 1 onion
  • 1 leek
  • 1 carrot
  • 1 spicy red ñora pepper
  • 150 cl virgin olive oil
  • 200 gr crabs
  • 200 gr galeras
  • 500 gr trash fish
  • 1 generous morcel of eel
  • 2 ltr water
