Romesco Sauce - Saborea España

Instructions:
Make breadcrumbs from stale bread and set aside. Mash garlic, tomatoes and guindilla peppers with a mortar and pestle. Mix with breadcrumbs and set aside for several hours. Puré the mixture and add the ñora peppers, vinegar and oil. Blend until uniform.

  • 3 or 4 slices of stale country bread
  • ripened tomatoes
  • garlic
  • Guindilla peppers
  • salt
  • wine vinegar
  • 1 ñora pepper or ground red paprika
  • virgin olive oil
