“Ponche” A dessert from Segovia

Segovian ponche is a dessert with deep roots in the city and througout the province. It’s been around for a very long time and is considered among the most exquisite dishes. The first to commercialize it was the confectioner Frutos Garcia Martin in 1926. The sweets producer El Alcázar holds the official copyright. It’s still made the old-fashioned way, by producing a square cake from flour, eggs and sugar. It’s filled with frosting and covered with a thin layer of marzipan. The final touch, a sprinking of powdered sugar caramelized with a hot iron and forming distinct rhombic patterns. The result is a sweet and delicate dessert that can last for up to five days. It should be kept in the refrigerator.
