“Old Pot” (Traditional Fish Dish from the Canary Islands)

  • Parrot Fish (1,200 gr)
  • Algae (400 gr)
  • Potatoes (800 gr)
  • Green Mojo Sauce (400 gr)
  • Salt and pepper

Preparation:

Remove the meat from the parrot fish and make a broth with the heads and bones. With the broth you’ll stew the potatoes and fish meat separately. Mash the potatoes to form a bed on the plate. On top of the potatoes place the hydrated fried algae followed by the stewed fish. Decorate with onion shoots and the green mojo sauce.
