Suckling lamb is a typical dish of our traditional cuisine and an example of culinary survival, as its recipe has endured the passage of time with almost no major changes being introduced. The reason for this dish’s undeniable success is the raw material itself: our suckling lambs come mainly from the Churra, Castellana and Ojalada breeds. The keys to its preparation include the clay, fire and flavour provided by the wood oven and the experience of the Master Roaster. Today, suckling lamb has positioned itself as the quintessential celebratory dish.
