La Santa prawns

In Lanzarote it is known as La Santa Prawn, but for the rest of the world it is the Soldier Prawn (Plesionika Edwardsii). It is a very abundant crustacean in the Canary sea bottom. It lives very close to the ground at depths that go from 50m to 650m, but there are bigger populations between 120m and 350m. Its flavor and texture are exquisite. It has turned into an authentic feast from our seas.
