Set the beans to soak the night before.
If the spinach is fresh, wash thoroughly in water to remove any dirt. Alternatively, use frozen spinach.
First cook the spinach in abundant water, over a low flame for 10 minutes.
In a separate pan add oil and sauté whole, peeled garlic cloves with slices of bread. Set aside the bread when it’s golden-colored and remove frying pan from heat when the garlic is done. Mash the fried bread in a mortar with vinegar, the fried garlic, cumin and guindilla peppers to taste.
When the oil in the pan has cooled add the paprika and cook lightly adding the mash from the mortar. Finally, add the cooked spinach, chopped finely, along with the pre-soaked beans, for another 10 minutes. Season to taste and serve with fried bread in a clay pot.
