Castellana soup

Ingredients

  • Loaf of bread (crust and some breadcrumbs)
  • 2 cloves of garlic
  • 50g of cured ham
  • 50g of smoked pancetta
  • 1 tablespoon of sweet paprika
  • Black pepper
  • 6-8 tablespoons of olive oil
  • Eggs
  • Salt
  • Chilli

Elaboration:

Heat oil in a pot and add the following in the order listed: garlic, ham, pancetta, bread and then the sweet paprika. Add the water and leave to boil for 10 minutes, then season with salt, pepper and chilli.

 

Serve in an earthenware pot with a poached egg or an egg yolk cooked to your preference.
