Borage: So humble yet excellent in dishes
Among the ample range of vegetables traditionally grown on the farms of Zaragoza, many deserve special mention. In this group you’ll find thistles, artichokes, bisaltos (variety of pea), chards, asparagus, lettuce, endives, and green beans. But without doubt borage can be considered the most exclusive and truly native of our produce – even if it’s grown in other areas close to the banks of the Ebro river, in Navarra and La Rioja. But here in Zaragoza it enjoys the most culinary prestige.
