Preparation
Step 1.
Clean the celery stems and leaves well. Cut the stems into 5 cm lengths making perpendicular cuts in the pieces on both ends. Toss them in cold water. Blend the celery leaves and garlic in a blender to taste.
Step 2.
Blanch the mint and add remaining ingredients to Thermomix. Dice and strain. Add this to earlier mix, to taste, store in opaque bags and freeze.
