Celery Mint and Gin Fiz

 

Preparation

Step 1.

  • 1 bunch, celery
  • c/s garlic
  • olive oil
  • 1/10 gram salt

Clean the celery stems and leaves well. Cut the stems into 5 cm lengths making perpendicular cuts in the pieces on both ends. Toss them in cold water. Blend the celery leaves and garlic in a blender to taste.

Step 2.

  • 500 grs TPT
  • 450 grs water
  • 6 icecubes
  • 130 grs mint, blanched and minced
  • 5 grs lyo celery
  • 2 drops essence of mint (500 grs mint leaves passed through the green star)

Blanch the mint and add remaining ingredients to Thermomix. Dice and strain. Add this to earlier mix, to taste, store in opaque bags and freeze.

Step 3.

  • 13 grs Hendricks gin
  • 16 grs tpt
  • 46 grs lime juice, strained twice.
  • 11 grs olive oil

  • 8 pieces anglerfish, with bones
  • 8 prawns
  • 12 unpeeled garlic cloves
  • 1.2 liters red fish broth
  • 1 tbsp red pepper flakes
  • 1 cup white wine
  • 2 small guindilla peppers
  • flour
  • extra-virgin olive oil
  • 1 liter water or fish broth
  • Salt
