Haricot beans from Navarre
This is a variety of white bean, even though it can be found in different shades. Its consumption comes before its maturity, which gives a delicate creamy texture. It is collected manually at the end of the summer and it is unshelled from the pod when this is still not dry. That’s why it is considered a vegetable.
